Green Cheese and Chips

I would not eat them on a plate,
I would not eat them—hold up, wait.
You say they’re green, I say they’re cursed,
But nachos always come home first.

Would you eat them late at night?
Would you eat them, glowing bright?
Would you melt that mystery cheese,
on chips so green they tease disease?

I would, I would, I feel no shame.
I’d eat them hot, I’d eat them plain.
I’d eat them sitting on the floor,
then pawn my soul and ask for more.

You see, dear friend, the truth is this:
Even strange cheese deserves a kiss.
And if it’s green from jalapeño hue,
then melt it twice—dreams still come true.

Because pawned or bought, fake or real,
green cheese still melts, and that’s the deal.
I ate them all. I’d do it again.
Regret is weak. Cheese always wins.
