Let’s face it: vegetables have a branding problem. Somewhere between “steamed kale” and “raw broccoli in a bag,” we collectively decided flavor was optional. But not on my watch. Look, today may be about vegetables, but that doesn’t mean we have to suffer through another sad salad. These nachos are a celebration of plant-based power—with extra cheese and zero shame. Veggies never asked to be boring. They just needed a nacho intervention.
